Cashew nuts or Kaju : are technically not nuts but seeds. The scientific name of cashew nuts is Anacardium occidentale, which belongs to the family Anacardiaceae. It is a popular ingredient in various Indian dishes and dairy alternatives like cream and cashew milk. They have a rich nutty flavour.

The Cashew is cultivate primarily in India, Vietnam, Tanzania, Benin, Brazil and other countries in East and West Central Africa and South East Asia. Plantings have also been established in South Africa and Australia.
